2019 Claret, Columbia Valley
This wine is a blend of Cabernet Sauvignon, Petit Verdot, Merlot, and Malbec (25% each). The 2019 fruit from the Columbia Valley arrived slightly more ripe than the Pinot Noir from Willamette Valley and as a result this wine is very nicely balanced with intense fruit-forward flavors and aromatics. During barrel aging, the lees with stirred frequently to build silky texture in the wine.
Tasting Notes
A Bordeaux blend of four varietals with aromas of jammy dark and red fruit and bold flavors of cranberry, cherry, tobacco and spice.
Food Pairings
Bison steak tartine with basil paprika butter. Roasted leg of lamb with garlic and chive clarified butter sauce. Duck with spring green peas. Cheese plate of british sharp cheeses, stilton, crackers, and mustard. Scotch Eggs.
