2020 Reserve Sauvignon Blanc, Yamhill-Carlton (Estate)
The 2020 Reserve Sauvignon Blanc is a different take on the the wine production process from our traditional aromatic Sauvignon Blancs. Each wine started our from our estate vineyard in Yamhill-Carlton AVA, and were farmed to maximize aromatics and fruit-forward notes. However, the Reserve was barrel fermented and aged for 18 months prior to bottling. The wine was aged on the lees; that is, the yeast from the primary fermentation was left in the barrel, a process that is also known as Sur Lie. The Sur Lie process builds a bigger mid-palate and creates a more round mouthfeel over time. The lees contact along with barrel aging contact created a wine that is similar in mouthfeel and texture to an aged Chardonnay but with the fruitiness of a Sauvignon Blanc.
Tasting Notes
Aromas of bright citrus, lime, peach and passion fruit with a distinctive earthy gooseberry note, with flavors of peach and citrus
Food Pairing
Scallop ceviche. Kimbap with spicy beef. Ahi tuna poke bowl with avocado and chili onion topping.
