2021 Sauvignon Blanc, Yamhill-Carlton (Estate)
From the beginning, this wine was made with the intention of developing intense aromatics and a rich palate of tropical fruits. The Sauvignon Blanc fruit was farmed independently from the remainder of the vineyard to promote the development of varietal flavors and the winemaking focused on preserving those delicate aromas and flavors all the way into the bottle. While the making of this wine is laborious and nerve wracking, the culmination of flavors and aromas in the wine are a pure expression of Sauvignon Blanc.
Tasting Notes
Earthy aromas of bell pepper, with citrus notes of grapefruit and blood orange; the palate is citrusy with a hints of sea salt.
Food Pairings
Fresh pesto and angel hair pasta, oven baked sole, steamer clams in a garlic butter sauce, or a burrata and prosciutto salad.
